Top New York chef and restaurateur Matthew Kenney and his partner, Sarma Melngailis, had been thinking of opening a Moroccan restaurant. But one night they were invited to a raw food restaurant -- and it changed their lives. They instead opened Pure Food and Wine, a restaurant devoted to creative, tasty raw food, and it has been drawing rave reviews. Dishes such as Zucchini and Green Zebra Tomato Lasagne, Golden Squash Pasta with Black Summer Truffles, and Dark Chocolate Ganache Tart with Vanilla Cream have given raw food a sexy new appeal.
The decision to go raw was shocking at first for these two ex-carnivorous chefs, but they soon found that preparing and eating raw food made them and their guests feel their physical best. Melngailis noticed a difference almost immediately -- "Light, clean, natural, and alive foods make you feel light, clean, and more alive. And sexy." This new way of life has changed their outlook on eating and cooking and connects them to the world around them. As Kenney says, "Raw foods and the lifestyle associated with it are so compelling and complex that we will be forever learning and growing. Already it seems that we have discovered some of the magic that life offers."
In this lushly photographed book, Kenney and Melngailis share some of that magic -- and show that preparing and eating raw does not mean bland, unsatisfying, or impossibly time-consuming meals. Using dehydrating, Vita-Mix blending, a nuanced understanding of spices, and unprecedented creativity, they explore a whole new outlook on raw food that transfers beautifully and easily from their kitchen to yours -- no matter what your present diet. And you'll immediately begin to reap the benefits of healthful, delicious, life-giving raw food.
The recipes in RAW FOOD/REAL WORLD are absolutely delicious! When the raw food craze started, I was skeptical, to say the least. I mean, if we weren't meant to cook our food, why would we have discovered fire?
But man, this book makes a good case for raw food purely by giving you absolutely delicious recipes to try. If all food tasted like this, I would never stop eating!
Of course, I haven't noticed the supposed "glow" that comes with eating raw food, and I haven't really noticed any health benefits yet, but I haven't been "cooking" out of RAW FOOD/REAL WORLD for all that long. Maybe in time, I'll see benefits beyond just tasty food.
Anyone who loves food should read and enjoy RAW FOOD/REAL WORLD.
I'm forever trying to switch to healthy foods, and in that desperate attempt, hunt for books that'll help me in that cause. Well after a million or so books, this one did. I actually tried out some of the recipes in the book and I loved it. Not just me. Everyone I made it for loved it. I never knew that raw vegetables can taste soo good. Usually I go by the saying that nothing healthy ever tastes good. I'm eating my own words now. Hats off to the chefs. :)
Do I like raw food? No. Should I? Yes. This book is great at showing you exactly what to eat, and how much to really change how you feel and what you look like. Feel and look tired? Its because your body has to manage a lot of food that does not produce natural and healthy processes! Raw food, (like natural makeup and skin care products) have a similar slogan, don't put on your skin what you wouldn't put in your mouth. This is so true because of the way your skin works and breathes. This book in conjunction with a good all natural skin care product will surely bring the life back to your eyes and the spring back into your step. It is true that after 24 hours after picking fresh veggies, they lose 70% of all their nutrients. So remember that when eating!
Over the past few months, I have bought a truly ridiculous number of raw food books. This may be one of my favourites. It's not the easiest, and it's certainly not beginner-friendly, but it does what any good cookbook should do- it makes you excited to attempt to recreate the recipes contained within, and inspires you to push the limits of your own ideas on what a particular style of cooking can accomplish.
Like I said, it's not a beginner's book- a lot of the recipes call for a dehydrator, which someone who isn't already a convert to the lifestyle might not have on hand. Even more experienced raw foodies may be put off by the sometimes extensive prep time. But I think the extra effort is well worth it. Kenney & Melngailis give examples of how to make foods I never thought would fit into a raw lifestyle. Samosas! Pizza! Ridiculously decadent desserts. They're all in the book and all beautifully photographed- you can tell these two restaurateurs understand the power of presentation, whether it's in serving a customer or putting together a book. One look- one taste- and you'll want to make the next recipe, and then the next. And then you'll want to move on to your own creations. Who could ask for more than that?
I can't say enough good things about this book or recommend it too highly. It's just about perfect. It changed my life and made my raw journey SO much easier. This has everything in it; general information about the raw lifestyle and foods, as well as the best recipes I've ever tasted. I've probably made at least 50% of the recipes in this book, most more than once & some, like the watermelon-tomato gazpacho, has become a weekly staple in my raw diet.
