I love to cook -- especially ethnic foods -- but right now it's largely limited to following recipes from books. I also like to experiment with different ingredients and would love to learn more about cooking techniques, tips (and shortcuts!) from professionals.
Success in my mind will have arrived when I can craft a gourmet meal from almost any mix of arbitary ingredients -- without a recipe -- just like culinary school students must do before graduating. Imagine being able to make a last-minute dinner from anything in your refrigerator without having to go to the store!
