Whenever I was packing lunch, I would pack a little cooler with blue ice -- that way I could pack healthy portable things like fruit, hard boiled eggs, nuts, and string cheese. One of my favorite healthy easy to fix meals are salads -- grab a bag of lettuce, a container of feta cheese, some dried cranberries and some dressing. Toss it all in a plastic container, put it in your cooler and you're ready to go!

I'm a sandwich fan: peanut butter, or low-fat ham with lettuce, or hummus and low-fat cheddar cheese are my favorites. All on dense, hearty, whole-grain bread, of course! I always pack a couple pieces of fruit and a bag of raw veggies like cherry tomatoes or baby carrots. I also like to make up my own trail mix, a combination of nuts, seeds, and dried fruit. I put 1/4 cup portions into either a small container or a zip-lock bag and just grab one to put in my lunch bag in the morning. Don't forget a water bottle!
