There are a few delicious foods that are only found in early Spring. Miss them, and you'll have to wait the next 11 months to enjoy their bright, fresh tastes. Some can be found in supermarkets, but many are available only in the area where they're grown. The locals know all about them, and look forward to adding them to meals once the snow melts and the sun starts to shine longer each day. Here are 3 favorites:
Ramps are a type of wild leek with a garlicky, onion taste celebrated in Appalachia. West Virginia is known for its ramp festivals, where you can sample more foods made with ramps than you ever dreamed possible.
Fiddlehead ferns are a delicacy in the northeastern part of the United States, with a taste somewhere between asparagus and green beans. Maine is the place to be if you're looking for fiddleheads, where you'll find them sauteed, tossed into salads, or pickled.
Dandelions aren't just sa uburban-dweller's nemesis; they're also packed with nutrition. 1 cup dandelion greens has only 25 calories, yet it provides over 100% of your daily vitamin A needs, and over 30% of your vitamin C. Picked fresh and young (before fertizler or weed killer is used), they're a delcious addition to salads.
